👩🍳 Instructions
1️⃣ Prepare the crêpes
In a bowl mix flour and eggs, then gradually add milk, oil and a pinch of salt. Let the batter rest for 30 minutes. In a lightly greased non-stick pan, pour a ladle of batter and cook for 1-2 minutes per side until golden brown. Repeat to get 8-10 crêpes.
2️⃣ Prepare the filling
Clean and slice the mushrooms. In a pan heat oil, sauté chopped onion and garlic, add mushrooms and cook for 10-15 minutes over medium heat. Season with salt and pepper, then add ham cut into strips.
3️⃣ Prepare the béchamel sauce
In a small saucepan melt butter, add flour and stir for 1 minute. Pour in warm milk gradually, stirring constantly until you get a smooth cream. Season with salt and nutmeg.
4️⃣ Assembly and cooking
Grease a baking dish and spread some béchamel on the bottom. On each crêpe spread a tablespoon of béchamel, the mushroom and ham filling, roll or fold into a package. Arrange crêpes in the baking dish, cover with remaining béchamel and sprinkle with grated cheese.
5️⃣ Bake in the oven
Bake in preheated oven at 180°C (350°F) for 20-25 minutes, until the surface is golden and crispy.

Let rest for 5 minutes before serving. Serve with a green salad for a complete meal. For a lighter version, you can use light béchamel or reduce the cheese.
